ISO 3632:2011
The four numbers that matter.
ISO 3632 is the international specification for saffron. It measures the three pigments that define quality — and the moisture content that determines shelf life.
- Crocin
- Coloring strength. Measured at 440 nm. Higher = redder dishes.
- Picrocrocin
- Bitterness / taste. Measured at 257 nm. Defines flavor depth.
- Safranal
- Aroma. Measured at 330 nm. The honeyed, hay-like perfume.
- Moisture
- Shelf life. Lower moisture = longer stable storage.

Every kilo of every lot ships with a certificate of analysis like this one. Lot codes are traceable to specific farms and harvest dates.
