ISO 3632:2011

The four numbers that matter.

ISO 3632 is the international specification for saffron. It measures the three pigments that define quality — and the moisture content that determines shelf life.

Crocin
Coloring strength. Measured at 440 nm. Higher = redder dishes.
Picrocrocin
Bitterness / taste. Measured at 257 nm. Defines flavor depth.
Safranal
Aroma. Measured at 330 nm. The honeyed, hay-like perfume.
Moisture
Shelf life. Lower moisture = longer stable storage.
